The Runza Sandwich Recipe - A Nebraska Favorite

Almost anyone living in Nebraska knows of the Runza sandwich. Runzas are rich with flavor, a lovable warm bun stuffed with seasoned hamburger, cabbage, sauteed onions and cheese. So good and sooooo Nebraska. Many of us have enjoyed a runza sandwich at Memorial Stadium during a Nebraska football game. And, others frequently stop at Runza throughout Nebraska. But, some of us also want this delicious classic at home. Now, you can with the following homemade runza sandwich recipe!

The Dough Recipe - mix water, yeast, sugar and salt. Stir until dissolved. Add egg and melted margarine. Stir in flour. Put in refrigerator 4 hours. Roll dough into oblong shape. Cut into 16 Squares. Divide hamburger mixture between the squares. Pull sides together and press edges together to make a pocket of meat inside the dough. Place on greased baking sheet. Bake 20 min at 350 degrees.

  • 2 Cups Warm Water
  • 2 Packages Active Dry Yeast
  • 1/2 Cup Sugar
  • 1 1/2  Teaspoons Salt
  • 1 Egg
  • 1/4 Cup Margarine (melted and cooled)
  • 6 1/2  Cups Bread Flour

The Hamburger Recipe - brown hamburger and onion and drain. Add cabbage, seasonings and water. Simmer 15-20 min. Let cool completely before adding to dough.

  • 1 1/2 lbs. hamburger
  • 1/2 cup chopped onion
  • 3 cups shredded cabbage
  • 1/2 cup water
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne (optional)
  • Cheddar Cheese (optional)
